I am on a yeast forum trying to get the message across about the mercury/yeast connection and we have a started a thread there for some good candida safe recipes and I want to share them with you. Doing a gluten/dairy/sugar free diet is crucial to effectively detox from mercury. Contributions and menu ideas welcome!!!
This one is like a harbour in a storm for me, got me thru many severe cravings.
PUMPKIN MUFFINS with lots of fibre no dairy, no sugar, no gluten
3-4 T organic olive oil 3 large eggs 1/2 cup pumpkin, (I use mashed sweet potato or yams, the orange fleshed ones) Beat these 3 ingredients together, and then add: 3 tsp. stevia dissolved in 1/4c of water 1 tsp. Vanilla 1 Tbsp. fresh lemon juice
Mix the following together and add to the above:
2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. baking powder 1 tsp. baking soda 1 cup ground flaxseed meal (make sure this is as fresh as possible) 1/4 cup amaranth (or your preferred) flour 4 oz. chopped nuts (optional)
Mix all ingredients together quickly and immediately spoon into muffin pan/papers. Mixture will start to expand as lemon juice reacts with baking powder and soda. Bake at 350º for 20 mins. This recipe makes 12 muffins; however, you may also double the recipe and get 18-20 larger size muffins.
Top with a whole pecan for a nice presentation.

Yam or sweet potatoe fries. Preheat a glass pan in a 400 oven with some coconut oil in it. Cut up one or 2 potatoes like french fries, leave skins on for more fibre and to keep the glycemic index lower. Add fries to preheated pan and toss with chili powder and natural seasoning salt and seasonings of your choice. Bake at 400 for 10-15 minutes and toss again and bake for 10-15 more. Yummo!!!!

Legal Caesar Salad
3 T extra virgin olive oil, preferably organic 1 T freshly squeezed lemon juice 1 t Dijon mustard 1 t anchovy paste 1 finely chopped or crushed garlic clove Wisk well or blend with a chopped or crushed garlic clove and let sit for 1 hour and toss with washed and dried romaine lettuce. Delicious!!! You could double the recipe and save the rest for tomorrow's lunch!!! Enjoy!!!

lol its so confusing. their is so many contradicting info I find it impossible to do the candida diet.

I ate baked mashed yams with clarified butter 2 or 3 nights a week, and sometimes I would sprinkle them with cinnamon for a dessert. Now they are the orange fleshed ones, the yellow ones, that are called kumeras in NZ are more starchy and I would avoid. But the orange ones were a saving grace for me and they were never a problem, but I was so strict otherwise, that was my only limit food. I didn't even eat rice for the first 3 months...it was summertime and I had lots of salads and fresh veggies to go with my meals. I really learned alot of new ways to cook veggies. And hollandaise sauce was another real treat for me, although some may have a problem with that if they have gall bladder issues. Here is my hollandaise sauce recipe, it is a bit of fussing, but oh so worth it, I ate it by the spoonful!!!
Best Hollandaise Sauce ingredients 10 oz. (2-1/2 sticks) good-quality unsalted butter 3 large egg yolks 3 Tbs. water 2 tsp. fresh lemon juice Salt and freshly ground pepper to taste
how to make In a heavy-based saucepan, melt the butter. Simmer it rapidly for at least 10 min.; the water will evaporate and the milk solids will coagulate on the bottom and sides of the pan. Let the melted butter sit for a few minutes so the solids will fall to the bottom. Skim off the foam on top and then either decant the golden liquid, leaving the solids behind, or pour the melted butter through a cheesecloth-lined strainer. Put the eggs and water in a Windsor pan (a saucepan with sloped sides) or in a heavy-duty metal mixing bowl (you'll have to hold it by one edge with a kitchen towel over the burner). Off the heat, whisk the eggs and water for 30 seconds, whipping in lots of air. Cook the sabayon over very low heat, whisking constantly and scraping the bowl, until thick and voluminous. The whisk will leave tracks that hold for a few seconds. At this point, take it off the heat and whisk rapidly for 30 seconds to cool it slightly. Add the clarified butter a little at a time, whisking constantly. Be sure the butter isn't too hot or it will break the emulsion.
Finish by whisking in the lemon juice and seasoning with salt and pepper.
Enjoy over broccoli or asparagus or even with your favorite chicken recipe....good for those who have trouble with losing weight.

The candida diet has helped me tremendously, and these recipes have helped keep me sane! Here is a link to the Whole Approach forum, which has an extensive candida diet recipe section http://wholeapproachforums.com/eve/forums There are also a couple cookbooks that are helpful: The Candida Control Cookbook by Gail Burton - it's a great starter cookbook. I mostly use it for the dessert recipes, but I usually alter them a bit (add stevia to sweeten them up, etc). The Complete Candida Yeast Guidebook Jeanne Marie Martin Allergy and Candida Cooking Made Easy by Sondra Lewis - not all of the recipes are candida-safe, but many are. And it teaches you how to do substitutions for ingredients we can't have. Cheers, ~Tia
